Super power salad- Kale, arugula, tomatoes, roasted beets, black radishes, goat cheese, blueberries, Marcona almonds, baby cukes and avocado drizzled with balsamic and topped with a scoop of tuna salad made with a touch of vegenaise, diced cucumber and scallions. Yum. I've finally figured out that I need to start prepping my lunch before Tom gets home or he is done with his lunch before I even sit down!
