Can’t you just feel spring? Here in the midwest, we are experiencing such gorgeous spring weather! My spring flowers are growing like crazy and my tulips actually have buds! So early for us. I’m planning to head outside for my run after my last appointment today.

In my last post, I listed a few new recipes that I had either already made or planned to make. So I thought I should report on the Parmesan Potato Stacks that I made Friday night. I substituted skim milk for the half and half, but I have to tell you that it was still really, really good. They are also VERY pretty and not as labor intensive as I expected them to be. I would highly recommend this recipe! Even with skim milk.

This week, I’ve made my grocery and menu lists and I hope I can be disciplined enough to stay with this. I’ve been known to allow my week to explode and not stick with my menu plan.

MondayChicken Cashew Lettuce Wraps Another Pinterest find. I don’t think you can go wrong with this one!

 Tuesday – Slow cooker Spaghetti Bolognese. I printed this out months ago and jotted a handwritten note that gives credit to my friend Amy Martin. Can’t wait to try it!

WednesdayCreamy Avocado & White Bean Wrap for me and Chicken Quesadillas for Tom. The avocado and bean wrap is another pinterest recipe.

Thursday – Dinner with the Bagels after Denise and Ebba’s spring show. You can check out a few images of their awesome goodies here. Tom is on his own : ) I’m guessing he’ll have KFC or something that I don’t care for! That’s how we both handle a night when we’re on our own…I usually opt for Jimmy John’s when he’s out of town.

Friday – Grilled salmon and steak, baked potatoes, arugula salad with feta, walnuts, green onions, pears drizzled with green apple vinaigrette (Donna brought me this amazing vinegar from her trip to AZ with her Dad) and garlic bread.

I don’t plan weekend meals…maybe I should?

This weekend, I spent a little time rearranging things in the house. It’s probably been 3 months since I spent any time just taking a fresh look at my home. I used to do it all the time, but lately, I just haven’t. Anyway, I loved the time I spent on my family room bookshelves and built-ins, as well as my studio closet. Purging like crazy, along with rearranging and stylizing. I’m happy with how it looks. I told my friend Lin that most people won’t even notice it, but it feels so fresh to me!

I am so excited to share peeks from Hadley’s newborn session. While I was at WPPI, I knew that I would be coming home to Hadley’s session, so I went a little crazy buying newborn props. I even texted Liz (Hadley and Merrick’s sweet Mom)  quite a few times in my excitement!

Arlington Nebraska » Becky Novacek Photography - [...] Last Monday, I posted our menu plan for the week and I think for the first time ever, I stuck with the plan almost exactly. It felt good to have a plan and not have to try to figure meals out at the last minute. I think we ate much healthier with a plan too. I have to tell you that all three new recipes that we tried last week- Chicken Cashew Lettuce wraps, Spaghetti Bolognese and Avocado White Bean Wraps-were all keepers! The Chicken Cashew wraps were the BEST! Honestly one of the best new recipes I’ve tried in a while. The night that I made them, I knew was a busy one, so I prepped everything in the afternoon and then just had the actual cooking to do when it was dinner time. I need to do this more often. Prepping in the morning or afternoon, so that I don’t flake out on making a good dinner and opting for something not as healthy or grabbing carry-out. One thing I would suggest about the wraps, is that you double it, unless you’re cooking for one. Tom and I had plenty for one meal, but had so little left the next day, that we had to arm wrestle over who got the leftovers. If you have a family, you will want to triple the recipe. [...]
